Foreword

The following guide is divided into four parts with the aim of helping the (future) chocolatier to open and develop his chocolate factory/shop.

The following sections were created using:

  • Field surveys carried out by hub.brussels agents to identify the location of chocolate retailers and the neighbourhoods in the capital with a high density of chocolatiers.
  • Interviews with fifteen sector players (chocolatiers, federation members, etc.). The interviews provided insight into the opinions of the professionals about recent changes in the sector, new trends and changes in consumer habits.
  • A consumer panel. Eight Brussels residents (four men and four women ranging in age from 24 to 62) were interviewed to understand their expectations, reasons for purchasing and their relationship with chocolate.
